Easy Corn Salsa Dip

Fresh corn salsa is my jam. It's hearty, healthy and the flavors are undeniably delicious. The subtle sweetness of corn goes perfectly with spicy jalapeƱos. There is just enough heat to make you come back for more!

Corn salsa is a great snack or appetizer idea to take away at a potluck dinner with friends. Just do not forget the fleas! Corn salsa will not last long with hungry people.

Sweet and salty corn salsa is also excellent for burrito bowls, for use on tacos, fish or poultry. It tastes so good with any Mexican dish out there. And of course, you can eat it alone with fries.

How to make corn salsa

This recipe requires canned corn, but you can certainly use fresh corn on the cob if you have it! You can also grill the corn on the cob and use it too – that would give it a good toasty taste!

To make, chop the jalapeƱo, pepper and onion and put them in a bowl with the corn kernels.

Add lime juice, olive oil, sugar and salt. Mix everything gently to combine. Finally, chop the coriander and mix it. Serve cool or at room temperature.

In a bowl, combine corn, green pepper, jalapeno and red onion.

Incorporate lime juice, 2 teaspoons of olive oil, sugar and salt. Chop and add coriander just before serving.
