Rich and tasty spicy pork meatballs made with ground beef, rice and onions. Simmer in the tomato sauce until they are perfectly cooked!

What are porcupine meatballs?

Have you ever eaten porcupine meatballs? These are beef balls stuffed with uncooked rice and chopped onion, giving it a pokey or "bumpy" shape! That's why they call them porcupine meatballs.

We love these meatballs because rice gives them a nice, consistent texture.

Meatballs are simmered in a tomato sauce, making them ideal for serving on cooked white rice. Believe it or not, my kids always ask for a second portion of this dinner. It's a success all around the table! Which makes it worth the extra cooking time (only 45 minutes – not bad!).

How to make porcupine meatballs

MEAT BALLS. Take a medium-sized bowl and mix together the rice, water, onion, salt, celery salt, pepper, garlic powder and eggs. Add the ground beef and mix well. Shape the beef into 1 1/2 inch balls.

COOK. Heat a frying pan with 2 tablespoons of olive oil over medium-high heat. When the meatballs are golden brown, drain or absorb them with paper towels.

SAUCE. In a bowl, add tomato sauce, brown sugar, water and Worcestershire sauce. Mix everything and then pour over the meatballs into the pan. Reduce heat to low and simmer for 45 minutes.

What to serve with porcupine meatballs? We usually serve our meatballs on cooked white rice. It's simple, classic and tasty. You can also serve them with flavored rice like Rice A Roni. Another healthy option is spaghetti squash or even cauliflower rice.

How to store the remaining meatballs? Keep the remaining porcupine pellets in an airtight container in the refrigerator for 4 to 6 days. This dish is ideal for the leftovers of lunch! It tastes great just warmed up in the microwave or oven.

Freezing Uncooked Meatballs If you prefer to freeze these meatballs for another day, put them on a cookie sheet or on a plate and cover them with a piece of meat. plastic film.

Put them in the freezer for a few hours until they are well frozen. Then you can transfer them to a plastic freezer bag. Keep in the freezer until you want to cook and serve them!

Brown the meatballs in a pan with 2 tablespoons of vegetable oil. Drain the oil when the meatballs are golden.

Pour tomato sauce, water, brown sugar and Worcestershire sauce into a bowl. Mix and pour over the meatballs. Reduce heat and simmer for about 45 minutes.
