Have you ever heard of Albondigas soup or tasted it? If you have not done it, you are totally missed! But this is your chance to try it now.

What is the albondigas soup made of? This traditional Mexican soup has a tasty broth background filled with tomatoes and other vegetables and includes homemade meatballs. There is sometimes rice in there too!

This recipe was recreated from the soup that my great-grandmother would prepare, and we finally succeeded! It's tasty, hearty and similar to grandma's!

All the flavors of this soup are so delicious and simple. After creating the seasoned broth base, add the meatballs and vegetables and let it simmer until you are ready, creating an easy and tasty Mexican soup recipe.

How to make a soup of albondigas

I always start by preparing the meatballs first. You can use frozen or already prepared meatballs, but they are very simple to prepare and taste so good! I promise that meatballs made at home are the way to go to prepare Albondigas soup. Just combine the following ingredients:

Ground beef
1 beaten egg
chopped garlic
chopped coriander
cumin
salt pepper
cooked rice (optional)

Make the meatballs by combining these ingredients and rolling them between your hands (ours are 1 1/2 inches wide) You can make about 20 to 24 meatballs in total. Brown each pellet for a few minutes in a hot pan. Make sure all sides are golden. Put the meatballs aside while you prepare the rest of the soup.

In a large cauldron, combine the chicken, celery, tomato, cumin, oregano and coriander leaves. Bring these ingredients to a boil over high heat. Once it has boiled, turn the heat down and let it simmer for about 10 minutes.

Add the meatballs and potatoes to the soup mix. Increase the heat to a boil so that the meatballs can cook a little. Simmer and cook another 20 minutes. Add a little salt and pepper to taste and enjoy warm.

Can you add rice to the albondigas soup?

You can add rice to meatballs when you prepare them, or you can add as much as you like to the soup, cooking it for the last 20 minutes of simmering.

Can you freeze the albondigas soup?

Let cool and store in an airtight container in the refrigerator for 3 to 4 days, or freeze in containers or put two bags in freezer bags. To reheat, let it defrost in the refrigerator overnight, put it back in the oven and let it cook until it is hot. You can also put it in the microwave.

How to prepare a soup of albondigas in a slow cooker?

Simply add all your ingredients (except coriander) to your slow cooker and cook on low heat for 4 hours. Add coriander at the end, season with salt and pepper if necessary.

Meatballs: mix all ingredients well. Form 20-24 tight meatballs by rolling between your palms (we made about 1 1/2 inches wide). Brown in a hot skillet for a few minutes on each. Set aside.

In a large saucepan, combine chicken broth, carrots, celery, tomatoes, cumin, oregano and coriander leaves.

Bring to a boil and reduce to low heat to simmer for 10 minutes.

Place the meatballs and potatoes in the soup and boil them lightly so that the meatballs cook quickly. Simmer and cook another 20 minutes. Salt and pepper to taste. Enjoy warm.
